What is actually thrown away ends up in a glass at Verida

Verida Food – four HAFL students with a clear goal: less food waste, more good ideas.

As part of their entrepreneurship minor, they have started to turn an underestimated “waste product” into a new food: pesto made from carrot tops .

While most carrots simply end up in the compost, Verida's carrots are the star of the show. They transform the spicy carrot tops into a fresh, vegan pesto – surprisingly intense in flavor and versatile.

For them, it's not just about the product, but also about the principle: thinking differently. Using resources consciously. And showing that food can be more than just what's on the shelf.

The pesto is locally produced, plant-based, sustainable, and available in two varieties. It is currently available through direct sales and selected retail outlets.
